Anyone who has been to Iraq have experience with this? Live carp will cost less than $2 per pound in Chinese markers here in the city and I have a Chimnea that I am going to convert to Carp cooking.
I know how to smoke it (tastes like ham, and IMO is much better than smoked salmon) but I am kind of curious in trying to make Masgouf.
The videos in Arabic show how to cook it but they never quite show how to butterfly the carp's head. I think I may just use a hatchet.
Any tips on spices or preparation would be cool. Also any other cheap fish you think would be decent smoked.
Tilapia is so cheap I gotta try smoking that but I am not a fan. Only time I had it where it was vaguely edible was when my mother-in-law made it with a shit-ton of West African spices.
A friend of mine who retired down in Florida is a hardcore airgun enthusiast and he shoots them in canals...Not sure if he eats them though. ..But I am gonna check with him as well.
